Does anyone know how to change the Gimp's interface font color?
If so... please explain in great detail how this is done.

Are you using a third party theme from your user folder?
If so open the gtkrc in a text editor and for starters search for 'text' or text[NORMAL]' the first one will be near the beginning under 'style' code. When you find the first one you should see a list that should help you find the rest. Take note that there are normally more than one instance of each entry that you need to change. For example more than one instance of text[NORMAL] or text[ACTIVE].
